Ingredients for Vibrant Christmas Heart from Marshmallow (Zefir)

Ingredients:

Meringue:

  • Sugar – 130g
  • Egg whites – 125g

Syrup:

  • Water – 100ml
  • Sugar – 400g
  • Agar-agar – 20g
  • Berry puree – 300g (use a mix of blackcurrants, plums, and raspberries)

Extras:

  • Powdered sugar – for dusting

 

Recipe for Vibrant Christmas Heart from Marshmallow (Zefir)

  1. Prepare the Berry Puree:
    Blend the berries in a blender until smooth. Strain through a sieve to create a uniform berry puree.
  2. Make the Syrup:
    In a saucepan, combine agar-agar and water. Cook over low heat until it forms a thick paste.
    Add the berry puree and heat while stirring until bubbles appear.
    Gradually add all the sugar, stirring constantly, and bring the mixture to a boil. Cook the syrup over medium-high heat until it reaches 105°C.
  3. Whip the Egg Whites:
    While the syrup is cooking, begin whipping the egg whites at low speed until foamy. Gradually increase the speed and add sugar in portions until soft peaks form.
  4. Combine Syrup and Egg Whites:
    Slowly pour the hot syrup into the whipped egg whites in a thin stream while continuing to beat on high speed. Whip until the mixture becomes thick and starts wrapping around the beaters.
  5. Shape the Marshmallows:
    Transfer the mixture to a piping bag with a round or heart-shaped nozzle. Pipe heart-shaped marshmallows onto parchment paper.
  6. Let Set:
    Allow the marshmallows to set at room temperature overnight to stabilize.
  7. Dust with Powdered Sugar:
    The next day, lightly dust the marshmallows with powdered sugar to prevent sticking.
