Ingredients

  • 2 1/2 cups (310g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp cocoa powder
  • 1 1/2 cups (300g) granulated sugar
  • 1 cup (240ml) buttermilk
  • 1 cup (240ml) vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp white vinegar
  • 2 tbsp red food coloring

For the Mascarpone Frosting:

  • 8 oz (226g) mascarpone cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (500g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 2–3 tbsp heavy cream

For Decoration:

  • Edible gold leaf or flakes

For the Cake:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, salt, and cocoa powder.
  3. Mix Wet Ingredients: In another bowl, whisk together sugar, buttermilk, oil, eggs, vanilla, vinegar, and food coloring until well combined.
  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.

For the Frosting:
